Hi! I’m Abigail. I love to bake and I love to read almost just as much. Saturday mornings always seem to be the best time to quietly read a good book before a big breakfast, so it is one of my favorite times. Since I am the resident breakfast lover, I usually am the one who gets up nice and early to make everyone waffles. Last year I asked for a waffle maker because I felt like I didn’t have enough cooking tools (haha yeah right!). I liked to make breakfast for everyone not just because it was yummy, but also because it got everyone out of bed happy. It was a good start to the morning.
That being said, I can understand poor Woodpecker in Woodpecker Wants a Waffle by Steve Breen. This hilarious book is all about the crazy things that Woodpecker does to get a waffle at the brand new diner, including but not limited to moonwalking, a stand-up comedy routine, and being shot out of a cannon! Talk about determined.
Luckily, being shot out of a cannon is not the only way to get breakfast. This waffle recipe is really easy and simple and can be doubled as pancake batter. To make it even faster, you can mix the dry ingredients days before, store in an airtight container, and mix in the wet ingredients the morning of.
For the waffles you will need:
2 cups all-purpose flour
2 Tbsp. Sugar
1 Tbsp. Baking powder
1 tsp. Salt
1 ¾ cups milk
⅓ cup vegetable oil
2 eggs
To make the waffles:
- Mix together flour, sugar, baking powder, and salt.
- Add milk, oil, and eggs and whisk until smooth.
- Pour onto preheated waffle iron and cook for 5-8 minutes.
- Keep your waffles warm in a 200 degree oven. Top with butter and syrup. Enjoy!
